Leftover Roasted Chicken Burgers

Hello all!
Have you every roasted a chicken and enjoyed it thoroughly for the first and second day but it doesn't look too appetizing on that third day. Well then, do I have a recipe for you


Changing up the style of the chicken that you will serve will do the trick and prevent you from throwing away a perfectly good roast chicken. To make this recipe, 
You will need:
Leftover chicken pulled off the bone.
1 tbsp mayonnaise
Salt and pepper
1 tbsp butter
Burger buns or 100% whole-wheat bread
Salad Bar sides (we used pickled onions, dill pickles, hot house tomato slices, Romaine Heart lettuce etc)
Hummus

Strip the meat off the bones. Place this meat in a food processor. If there were any vegetables that you cooked off with the chicken, throw those in too. We had leftover baked sweet potato so I threw that in and did not need any sort of binder  Sweet potato is like nature's candy and baked sweet potato tastes like butter so any opportunity to use it and I'll take it. You may need to use mayonnaise and a bit of salt and pepper to season. if you did not use baked sweet potato.  Process the meat till it comes together but not to a paste.


Form into burger patties (they do not shrink much, so what you make is what you get.
 Heat a large frying pan to medium heat, add butter. Once the froth of the butter has subsided, fry the patties till golden brown on both sides. About two minutes per side. No need to worry about raw meat here, the chicken is already cooked .









 I make open faced sandwiches for myself, so I smeared hummus on the a toasted slice of bread, placed the burger patty on the toast and added my fixings. We served baked sweet potato fries alongside these great leftover chicken burgers. So yummy!
Hint: The sweet potato was the best kick because it added a hint of sweetness to the whole mix.
